Honeybee Health: Easy Healthy Dinners

I have one more NYC post but thought I would switch it up today with some HEALTHY dinner options. With Spring break and Summer right around the corner Ive been trying to eat cleaner! I always try to cook healthy at home during the week because I know the weekends are where we indulge. Here are some shots of dinners I made this passed week

(Grilled Chicken, Mixed Greens loaded with more veggies and fresh Parmesan and cous cous/Quinoa blend)

(Filet Mignon with Mushrooms, plain sweet potato and steamed asparagus)

Pork Tenderloin, Cilantro cous cous and mixed greens with low fat feta and veggies)

Wild Japanese Scallops (sauteed with mushrooms, asparagus and two table spoons of teriyaki sauce) and brown jasmine rice.

*I try to eat really lean and clean for dinner because I always have something sweet after. I try to keep my sweets around a couple hundred calories.

  1. I wish my culinary skills could stretch this far. I rely on the boyfriend or I can make very simple dishes, I may try a few of these though. I always end up being completely stuck for inspiration so tend to stick to the same couple of meals, always nice to get some new ideas. x

  2. Looks delish and very healthy. I work about 50 hrs a week and cook about 3 tmes per week max, I wish I could cook more but Im exhausted when I get off work. I will try these ideas.

  3. These meals look easy and delicious!! However, I would not be able to get my husband to eat half of the things on those plates! But, now I'm inspired to cook a few different things for myself!!

  4. All of these dinners look delicious. You showed that healthy dinners can be yummy too! I like the posts you do on healthy eating. Do you grocery shop at everyday grocery stores or at sustainable grocers like Whole Foods and Trader Joe's?

  6. Although I don't eat meat, your meals look delish and very well cooked!! It is could that you are eating this healthy as that is so important! It is hard for me right now as a college student, but I try the best I can :)

  11. Ugh. I seriously need to start cooking again! I've been a mess for about a month! Your meals always look amazing. Good job as usual. Hope all is well girl!

  12. @Hilary im all over the place with grocery stores. I buy about 70% of my groceries from Traders bc they are super affordable and have great products. I get my Produce from Whole foods and whatever else fun items i can get my hand ons there...but i try to practice discipline at whole foods because it is PRICEY! I also shop at Ralphs (local regular grocery) too but mainly Traders.

  13. @Kristen I usually just keep it really simpler...olive oil, tons of Garlic, Sea Salt and pepper. Sometime i throw in some rosemary as well. The first pic i had a some premade seasons not sure what the name was.
    @michelle chic they are starting to carry quinoa everywhere i think i even saw some at the grocery section @ target.

  14. These dinners look so delicious and healthy but not too elaborate- which I like. When I get home after work I am so tired that half the time I just want to pop in a Lean Cusine and watch Jersey Shore! I have been trying to cook more and sit down and enjoy my meal - so these are a great inspiration for me!
